Sweet and sour pork like at the Chinese restaurant around the corner

Ingredients for 2 servings:

  • 300 g pork schnitzel
  • 3 tbsp soy sauce
  • 2 tbsp vinegar (white wine vinegar)
  • 1 red bell pepper(s)
  • 1 onion(s)
  • 1 red chili pepper(s)
  • 1 can pineapple
  • 2 tbsp oil
  • 150 ml vegetable stock
  • 3 tbsp ketchup
  • 1 tsp honey
  • ½ tbsp sauce thickener, dark
  • 2 tbsp parsley, flat, chopped

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Cut the meat into 2 cm wide strips. Mix the soy sauce and white wine vinegar, drizzle half over the meat and let it stand for 15 minutes. Clean the bell pepper and cut into fine strips. Finely slice the onion. Score the chili pepper, remove the seeds and chop finely. Drain the pineapple, reserving 5 tablespoons of juice. Quarter the pineapple slices. Pat the meat dry, sear all over in hot oil in a pan, then remove. Sauté the onion, chili, pineapple and bell pepper. Deglaze with the remaining marinade, vegetable stock, ketchup, honey and pineapple juice, and simmer uncovered for 5 minutes. Thicken with a dark sauce thickener if desired. Add the meat back to the pan, heat briefly and adjust seasoning if desired. Sprinkle with flat-leaf parsley. Serve with rice.
