Sweet and Sour Pork

Cut the meat into cubes. Mix the soy sauce with the egg yolk and 1 tablespoon of flour, stir in the meat and let it stand for 25 minutes. Peel the onion and slice it into rings. Wash, trim and slice the spring onions. Wash, halve, trim and dice the bell peppers. Peel and slice the garlic. Mix the remaining flour and baking powder into the meat. Heat the oil in a wok, add the meat and fry for 5 minutes. Remove the meat from the wok and keep warm. Pour all but 3 tablespoons of oil out of the wok. Briefly fry the garlic, then add the onions and vegetables. Mix the vinegar, sugar, 3 tablespoons of water, ketchup and salt and pour over the vegetables. Mix the cornstarch with 5 teaspoons of water and stir in. Bring everything to a boil until the sauce thickens. Pour the vegetable mixture over the meat and serve hot.
