Sweet and sour pork Thai style

Ingredients for 4 servings:

  • 350 g lean pork, e.g. schnitzel meat
  • 2 tbsp rapeseed oil
  • 4 cloves garlic, sliced
  • 1 onion(s), small, sliced
  • 2 tbsp fish sauce
  • 1 tbsp sugar
  • 1 red bell pepper(s)
  • ½ cucumber(s), deseeded and sliced
  • 2 tomatoes, cut into wedges
  • 115 g pineapple, freshly cut into small cubes
  • 2 spring onions, cut into short pieces
  • salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

A very refreshing variation with sweet and sour flavors

Cut the pork into very fine, thin strips. Heat the oil in a wok or frying pan. Fry the garlic over medium heat until golden brown. Add the meat and stir-fry for about 5 minutes, then stir in the onion. Season with fish sauce, sugar, salt, and freshly ground pepper to taste and stir-fry for another 3 minutes. Add the bell pepper, cucumber, tomatoes, pineapple, and spring onions and stir-fry for a few minutes. Serve with cooked jasmine rice.
