Sweet and Sour Potato Soup

Ingredients
 

  • 1 kg Jacket potatoes
  • 1 Red pepper
  • 2 Carrots
  • 2 Onions
  • 2 Apples sour
  • 5 Tomatoes

for the broth

  • 1 L Stock water, vegetable Stock of your choice, cold or warm
  • 5 tbsp Olive oil
  • 5 tbsp Balsamic vinegar
  • 2 tbsp Lemon juice
  • 2 tbsp Honey
  • 2 tbsp Mustard
  • 2 tbsp Chilli sauce, sweetie
  • 2 tbsp Soy sauce
  • 1 bunch Parsely
  • 2 tbsp Savory chopped or pounded as one has
  • 1 clove Chopped garlic
  • 1 tsp Pepper
  • Salt to taste
  • Grated ginger

Instructions
 

  • a very fresh, albeit warm, soup without meat ... if you like, then put a cracker or bocki in with it ...... i put all the ingredients for the broth in a large pot and mixed them well ..knobi chopped, parsley as well and added ..
  • Potatoes that had been boiled beforehand were jacket potatoes .. I cut them into bite-sized pieces .. The apples were peeled and diced, as were the onions, the peppers, the tomatoes .. The carrots were chopped very finely .. Everything came to the broth that was pulled through ..then I rubbed some fresh ginger into it ..
  • Now all the ingredients were in the pot and were heated .. the soup must not boil, just get hot ... !!!!! healthy and very tasty it was now on the table, I sprinkled with parsley again.
  • Tomatoes, carrots, onions were very finely chopped raw in the broth .... the steeping time and short cooking time are sufficient for the vegetables to become soft and retain their bite ...
