Sweet and sour sauce

Ingredients for 4 servings:

  • 200 ml pineapple juice
  • 100 ml broth, preferably vegetable broth or Asian stock
  • 2 tbsp soy sauce, light
  • 1 tbsp tomato paste
  • 3 tbsp sugar
  • 1 shot of vinegar
  • 2 tbsp cornstarch
  • 1 garlic clove(s), crushed
  • 1 pinch of salt
  • Sambal Oelek
  • e.g. pineapple (in pieces)
  • some bell pepper(s), diced
  • some water

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

Combine pineapple juice, broth, light soy sauce, tomato paste, sugar, and white vinegar and bring to a boil. Meanwhile, mix the cornstarch with a little water. Add the garlic to the sauce, stir in the mixed cornstarch, and bring to a boil. Season with sambal oelek and salt, and stir in the pineapple and bell pepper pieces.
