Vegan peanut sauce

Ingredients for 5 servings:

  • 2 cans of coconut milk, 400 ml each
  • 1 jar peanut butter, 500 ml
  • 1 tbsp sambal badjak
  • 1 tbsp sambal brandal
  • 1 tbsp sambal manis
  • 3 tbsp, heaped palm sugar
  • 150 ml soy sauce, salty
  • 200 ml soy sauce, sweet
  • 1 handful of peanuts, unsalted

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

Pour the coconut milk into a saucepan and add the sambal badjak, sambal brandal, sambal manis, grated palm sugar, and salty and sweet soy sauce. Mix everything well with a whisk and heat vigorously, but do not bring to a boil. Once the milk is hot, add the peanut butter and mix. Bring everything to a boil while stirring. Stay close to the heat, as the sauce can easily burn! Remove the pan from the heat. Chop a handful of peanuts and add them. The sauce should have a creamy consistency, but not too thick or too runny. If necessary, carefully add small amounts of peanut butter if the sauce is still too runny. If it is too thick, thin it with another can of coconut milk. Adjust the spiciness, sweetness, and savoriness with sambal, palm sugar, and soy sauce to taste.
