Ingredients for 4 servings:
- 1 bowl of lamb’s lettuce (Rapunzel)
- 1 small onion(s)
- 1 part/e Balsamic vinegar bianco
- 1 part/e balsamic vinegar – cream, dark
- 1 part vegetable oil
- 1 part water
- salt and pepper
- Sweetener, liquid
- chili flakes

Wash and trim the rampion salad thoroughly. The lettuce is usually packed with sand, etc. Peel the onion and cut it into very small cubes. Add the rampion salad to the salad bowl, along with the diced onion. Season with salt and pepper, add a small dash of liquid sweetener, and sprinkle over some chili flakes. Adjust the amount to your desired spiciness. In a salad dressing shaker (or alternatively, in a small cereal bowl, use a fork or whisk), combine 1 part salad oil, 1 part balsamic bianco, 1 part balsamic cream, and 1 part water. Shake well (or whisk in the bowl). Pour the dressing over the rampion salad and mix. Adjust seasoning to taste. But be careful, the spiciness of the chili flakes will only be noticeable after a few bites!
