Ingredients for 11 servings:
- 3 eggs, (M)
- 1 pinch of salt
- 75 g sugar, fine
- 100 g almond(s), ground
- 25 g spelt flour, sifted
- 25 g cornstarch
- 200 g white chocolate coating
- 200 g pistachios, green
- 150 g powdered sugar
- ½ lemon(s), the juice
- 1 tube(s) sugar – decorative lettering, red
- Powdered sugar, for dusting

Cut out about 10-12 circles from baking paper with a diameter of about 16 cm. Cut one slit into the circles from the edge to the center, bring them together to form a cone, and secure them with a paper clip. Place the paper cones, point down, in espresso cups or molds. Preheat oven to 180°C (top/bottom heat). Separate the eggs. Beat the egg whites with salt until stiff peaks form. Slowly add the sugar. Quickly stir in the egg yolks. Mix the almonds with the flour and starch and gently fold into the batter. Fill the batter into a piping bag and spread it among the paper cones. Bake in the middle of the oven for about 15-20 minutes. Then turn the cones upside down and place them on a wire rack to cool. In the meantime, roughly chop the chocolate coating and melt it in a double boiler. Finely grind the pistachios in a food processor. Now remove the baking paper from the cones and brush them all over with a thin layer of chocolate coating, then immediately roll them in the pistachios. Whisk the icing sugar and lemon juice until smooth and spoon a teaspoonful of icing onto the top of each cone. Finally, use the icing swirls to place small dots on the trees and dust them with icing sugar.
