Sweet gnocchi with egg and cranberries

Ingredients for 4 servings:

  • 600 g gnocchi from the refrigerated section
  • 3 tbsp oil
  • 5 tbsp brown sugar
  • 4 eggs
  • 6 tbsp cranberries, dried
  • 2 oranges

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

First, peel the oranges and cut them into smaller pieces. Place them in a tall bowl and puree thoroughly, then move the blender up and down to create a foam. Set the sauce aside. Heat the oil in a pan and fry the gnocchi until golden brown. Then add 3 tablespoons of brown sugar and let them caramelize slightly. In another tall bowl, beat the eggs until thickly foamy, then drizzle in the remaining 2 tablespoons of brown sugar. Pour the egg mixture over the gnocchi and mix. Continue stirring until the egg mixture has set. Then add the cranberries and mix to combine. Serve on plates and finally drizzle with the orange sauce.
