Ingredients for 2 servings:
- 40 g pasta (star or spiral)
- Water
- 100 g strawberries
- 3 tbsp sugar
- 2 eggs
- 100 g mascarpone
- 1 tbsp butter
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes
Cook the pasta in plenty of unsalted water for 10 minutes, then drain in a sieve. Shake off the cooking water well. Briefly wash the strawberries, halve them, and remove the stems. Place them in a bowl and sprinkle with 1 tablespoon of sugar. Crack the eggs into a bowl, add 2 tablespoons of sugar, and whisk to combine. Then stir in the mascarpone. Add the pasta to the mascarpone mixture and mix well. Add 1/2 tablespoon of butter to a pan and heat over high heat. Add the pasta mixture, spread into a flatbread, and bake for 5 minutes, reducing the heat. Turn the pasta mixture over with a spatula and break it up into small pieces. Add another 1/2 tablespoon of butter and bake the pancakes until golden brown on all sides. Finally, divide the pancakes between plates and top with the strawberries.
