Ingredients for 6 servings:
- 1 kg plum(s), red or damsons
- 250 g sugar
- 500 ml water
- 4 star anise
- 2 cinnamon sticks
- 1 lemon(s), juice only
Instructions

Bring the sugar to a boil with the specified amount of water, star anise, and cinnamon sticks. Once the sugar has completely dissolved, add 700g of the pitted and halved plums and simmer for five minutes. Discard the spices, puree the remaining liquid with a hand blender, and pass it through a fine sieve. Season with lemon juice to taste. Slice the remaining plums and add them to the soup. Refrigerate for a few hours and serve with a scoop of ice cream.
