Cold soup with berries or cherries

Ingredients for 6 servings:

  • 2 liters of water
  • 90 g sago
  • 1 kg berries (currants, raspberries, blueberries) or cherries, optionally frozen
  • 120 g sugar
  • 2 packets of vanilla sugar
  • 1 vanilla pod(s), including the pulp

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Combine water, sugar, vanilla sugar, vanilla pod, and pearl sago in a saucepan and bring to a boil. When the liquid starts to boil, reduce the heat to low and simmer gently for about 20 minutes, stirring constantly (important, otherwise it will burn!). The pearl sago will gradually swell, and the soup will slowly become thick. Only then add the fruit and simmer for about 5 minutes. Serve chilled. An ideal dish for warm summer days.
