Sweet potato and broccoli pan

Ingredients for 3 servings:

  • 2 sweet potatoes
  • 1 onion(s)
  • 1 broccoli
  • 1 coconut milk
  • 250 g tomatoes, pureed
  • possibly coriander powder
  • possibly chili powder
  • oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

simple, vegan

Dice the sweet potatoes. Chop the onions and cut the broccoli into small florets. Sauté the sweet potatoes, broccoli, and onions in a pan with a little oil. Then deglaze everything with the coconut milk. Add the passata. Simmer until the broccoli and sweet potatoes are tender. Season to taste with coriander and chili.
