Ingredients for 3 servings:
- 2 large sweet potatoes
- 3 tbsp olive oil
- 200 g feta cheese
- 8 cherry tomatoes
- Sea salt and pepper
- Herbs of Provence and/or dried tomato flakes

Quick and delicious – vegetarian
Preheat the oven to 200 degrees Celsius (convection oven). Peel and dice the sweet potatoes. Toss them in a bowl with olive oil, sea salt, and pepper. Place them in a casserole dish and bake for 20 minutes. During this time, dice the feta, wash, and quarter the tomatoes. Remove the casserole dish from the oven, sprinkle the sweet potatoes with feta and tomatoes, and bake for another 10 minutes. Sprinkle the finished casserole with Provençal herbs and/or dried tomato flakes, if desired.
