Baked Blueberry Oatmeal

Ingredients for 2 servings:

  • 100 g oat flakes, fine
  • 1 pinch of baking powder
  • 1 pinch of salt
  • ½ tsp cinnamon
  • ½ tsp vanilla extract
  • 30 g maple syrup
  • 1 egg(s)
  • 125 ml milk
  • 1 apple
  • 1 handful of blueberries, fresh or frozen

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Oatmeal casserole

First, preheat the oven to 180°C (top/bottom heat). Whisk together the milk, egg, and maple syrup. Mix the oats with the remaining ingredients and add to the casserole dish. Wash the apple, remove the core, and finely dice it. Add it to the oat mixture along with the blueberries. Pour the egg and milk mixture over everything and mix lightly with a fork. Bake the oat casserole for 30 minutes. Serve with Greek yogurt and fresh blueberries. It tastes great both hot and cold.
