Sweet potato and leek pan

Ingredients for 4 servings:

  • 300 g sweet potatoes
  • 2 stalk(s) leeks
  • 1 handful of herbs (fresh garden herbs)
  • 100 ml sour cream
  • 1 m.-sized onion(s)
  • some olive oil
  • some salt and pepper, black, freshly ground
  • some ginger, ground
  • some chives for garnishing

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Peel and dice the sweet potatoes and onion. Slice the leek into rings and wash thoroughly. Heat the oil in a covered pan and sauté the diced onion. Add the vegetables and sweet potatoes, and season. Cook over low heat with the lid closed until the vegetables are tender (about 10 to 15 minutes). Add the sour cream and finely chopped herbs, and season with salt, pepper, and ginger. Serve garnished with chives.
