- 1 kg flour
- 750 g sweet potatoes

Bolo do caco – a specialty from Madeira
Peel and quarter the potatoes, and boil them in water. Pass them through a fine sieve. Dissolve the yeast in about 150 ml of water. Mix the flour, mashed potatoes, salt, and the dissolved yeast and knead until a smooth dough forms. Let it rise for 2-3 hours. Divide the dough into small portions on a floured surface and bake on a very hot plate on both sides. Instead, I preheated the oven to maximum bottom heat and baked the rolls on the hot baking sheet for about 7-8 minutes on each side. Tip: For a delicious appetizer, cut the rolls crosswise after they have cooled and spread with garlic butter, put the lid back on, and cut them into quarters.
