Sweet potato – coconut – hash browns
- 0,5 Sweet potato approx. 150 g
- 0,5 Fresh lime
- 3 tablespoon Desiccated coconut
- 1 Egg
- 1 tablespoon Maple syrup
- Sunflower oil
Apple – ginger compote
- 1 Apple fresh
- 0,5 Lemon fresh
- 1 piece Fresh ginger about the size of a thumbnail
- 1 tablespoon Sugar
- 50 Milliliters White wine dry
Sweet potato – coconut – hash browns
- Peel and roughly grate the sweet potato. Squeeze the lime. Mix the sweet potato, lime juice, desiccated coconut, egg and maple syrup well. Fry tablespoonfuls in hot oil on both sides. Remove excess oil on kitchen paper.
Apple – ginger compote
- Quarter and peel the apple, remove the core and cut into cubes. Squeeze the lemon. Put the apple cubes in a saucepan, drizzle lemon juice over them. Peel and grate the ginger. Add to the saucepan with sugar and wine. Briefly bring to the boil. Stew on low heat for five minutes. Let cool down.
Serving
- Arrange the sweet potato – coconut – rösti together with the apple – ginger compote on a plate.
