Sweet potato curry

Ingredients for 3 servings:

  • 1 large sweet potato(s)
  • 1 chicken breast fillet(s), double
  • ¼ onion(s)
  • 4 m.-sized tomatoes
  • 250 g snow peas
  • 2 cups of cream
  • some cornstarch
  • ½ tsp curry
  • ½ tsp turmeric
  • Parsley
  • nutmeg
  • herbal salt
  • salt and pepper
  • 2 tbsp oil for frying

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Peel the sweet potato and cut into small cubes. Then boil the cubes in salted water for 10 minutes. Meanwhile, cut the chicken breast fillet into small pieces, season with salt and pepper. Heat the oil in a pan. Add the chicken breast fillet and fry. Add the onions, diced tomatoes, and snow peas. After a few minutes, deglaze the meat and vegetables with the cream. Add a little cornstarch and bring to a boil. Add the sweet potatoes and season with curry, turmeric, parsley, nutmeg, and herb salt.
