Sweet potato dumplings with berry compote

Ingredients for 4 servings:

  • 1 pack of ready-made potato dumpling mix (half & half, for 0.75l liquid)
  • 750 ml water
  • 2 apples
  • 100 ml water
  • 1 pack of mixed berries (frozen, 300 g)
  • 3 tbsp breadcrumbs
  • 8 tbsp sugar
  • 2 tbsp pistachios, ground
  • Water, lightly sweetened

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Mix 750 ml of cold water and 2 tablespoons of sugar. Stir in the dumpling powder and let it sit for about 10 minutes. Form 12 dumplings from the dough and place them in boiling, lightly sweetened water. Bring to a boil briefly and let it stand for 15-20 minutes. Peel, core, and dice the apples. Caramelize them in a saucepan with 3 tablespoons of sugar until golden brown. Add 100 ml of water and the berry mixture, and boil the sugar down. Add the apples and let it cook for another 1-2 minutes. Mix the breadcrumbs and 3 tablespoons of sugar. Remove the dumplings from the water and roll them in the mixture. Serve the compote with the dumplings. Sprinkle with pistachios.
