Ingredients for 2 servings:
- 2 sweet potatoes
- 1 egg white
- 2 tbsp extra virgin olive oil
- 1 ½ tbsp curry powder
- ¾ tsp sea salt, fine
- ¼ tsp black pepper, freshly ground
- ¼ tsp ground red pepper
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes
Preheat the oven to 200 degrees Celsius. Line two baking sheets with parchment paper. Cut the potatoes, skin on if you like, into thin sticks and place them in a bowl. Toss the sticks with egg white and olive oil. Mix the seasonings in a small bowl and spread evenly over the prepared sticks. Arrange the sticks on the sheets so they are not touching. Place the sheets in the oven for 20 minutes.
