Sweet potato, ginger and carrot mash

Ingredients for 2 servings:

  • 300 g sweet potatoes
  • 2 cm ginger root
  • 2 carrots
  • 50 ml milk
  • salt and pepper
  • 1 pinch of nutmeg

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Peel the sweet potatoes, carrots, and ginger and cut them into small cubes. Bring a pot of water to a boil and simmer the carrots, ginger, and sweet potato cubes for about 20 minutes, until tender. Then drain and return the cubes to the pot. Season, add the milk, and mash with a potato masher until smooth.
