Sweet potato hearts

Ingredients for 4 servings:

  • 500 g potatoes (floury)
  • 300 g low-fat curd cheese
  • 2 eggs
  • 1 pinch of salt
  • some flour
  • 2 tbsp clarified butter
  • Powdered sugar, for dusting

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel the potatoes and boil them in water (no salt!) for about 25 minutes. Drain, rinse, and allow to cool. Press through a ricer and let cool. Knead the potatoes with the quark, eggs, and a pinch of salt into a firm dough. If it’s too loose, add a little more flour. Roll out the dough on a floured surface and cut out hearts using a large cookie cutter. Heat clarified butter in a pan and fry the potato hearts until golden brown on both sides. Dust with powdered sugar.
