Sweet potato pan with tuna

Ingredients for 2 servings:

  • 1 m.-sized sweet potato(s)
  • 150 g peas
  • 1 can of tuna
  • 1 clove(s) garlic
  • 100 ml vegetable stock
  • 50 ml white wine
  • white wine vinegar
  • e.g. parsley
  • e.g. chives
  • e.g. rosemary
  • salt and pepper

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

First, peel the sweet potato and garlic and dice them into small cubes. Brown them in a pan with a little olive oil and deglaze with white wine, then add the herbs and peas. Add the tuna and heat gently. Then add the vegetable stock and let the whole thing simmer for about 15 minutes. Finally, season with salt and pepper and the herbs. You might want to add a little more white wine vinegar, as the sweet potatoes add a lot of sweetness!
