Sweet potato pancakes made from boiled sweet potatoes

Ingredients for 4 servings:

  • 5 large sweet potatoes, red
  • 2 eggs
  • 100 g low-fat curd cheese
  • 1 tsp salt
  • 1 pinch of ginger powder
  • 1 pinch of cinnamon powder
  • 2 tbsp cornstarch
  • 1 pinch of ground cumin
  • 1 large chili pepper(s), red, hot, pitted and very finely chopped
  • Fat for frying

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash and peel the potatoes thinly. Cut into pieces and boil in very little water (just enough to prevent them from burning) until soft. Remove from the heat and transfer to a bowl. Let cool and then mash with a potato masher. Mix in all the remaining ingredients and knead. The dough should be a bit stiff. Fry the potato pancakes in hot vegetable oil. Serve with sour cream or a fruit compote made from white fruits. Fresh, raw pineapple is also delicious. The pineapple takes some of the pungency out of the pancakes. I got this recipe from my Indian friend Niri.
