Ingredients for 1 servings:
- 400 ml water
- 100g quinoa
- 500 g flour
- 400 g sweet potatoes
- 2 tsp salt
- 15 g fresh yeast
- 200 g flour for processing
Instructions

for approx. 16 rolls
Wash the quinoa and bring to a boil with 400 ml of water. Simmer for about 10 minutes, then let cool. Do not discard the water. Grate the sweet potato and mix it with the quinoa, salt, yeast, and flour. Cover the dough and let it rest overnight. The next day, knead the dough again with the 200 g of flour and form into 100 g balls. Place the dough pieces on a prepared baking sheet and let them rise for about 20 minutes. Bake in a preheated oven at 175 °C (convection oven) for about 30 minutes.
