Sweet potato salad

Ingredients for 2 servings:

  • 2 sweet potatoes
  • 1 onion(s)
  • 50 g smoked ham
  • 1 bunch of parsley
  • 2 tbsp mayonnaise
  • 2 tbsp vegetable oil
  • 3 tbsp Balsamic vinegar, white
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Cook the sweet potatoes for about 30 minutes until al dente, let cool, then peel and slice. Transfer to a suitable bowl. Finely dice the ham and lightly fry in a pan with a little oil. Finely chop the onion and add it. Stir until the onions are translucent, then scatter it over the potato slices. Add the oil and vinegar, season with salt and pepper, and spread the mayonnaise evenly over the potatoes. Finely chop the parsley and sprinkle over the potatoes. Gently toss the salad with two spoons, adding a little meat broth or hot water if necessary.
