Pineapple chocolate muffins

Ingredients for 1 servings:

  • 1 egg(s)
  • 40 g sugar
  • 3 g vanilla sugar
  • 1 tbsp oil
  • 50 g sour cream
  • 60 g wholemeal flour
  • 5 g baking powder
  • 30 g desiccated coconut
  • 80 g dark chocolate
  • 2 slices of pineapple
  • cane sugar

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

quick and uncomplicated

Whisk the egg and mix well with the sugar, vanilla sugar, oil, and sour cream. Stir in the whole-wheat flour, baking powder, and desiccated coconut. Finely grate 15g of the chocolate, e.g., finely chop it with a knife. Dice the pineapple and mix both with the batter. While you’re dividing the batter into the baking cups, melt the remaining chocolate. Pour the melted chocolate over the muffin batter. Sprinkle with a little more brown sugar and then desiccated coconut, then bake in a preheated oven at 200°C for about 20 minutes.
