Sweet Potato Soup …

- 15 g Chopped almonds
- 100 Milliliters Milk
- Some onion
- 140 g Sweet potato
- 1 tablespoon Butter
- 150 Milliliters Vegetable broth
- Ground pepper white
- 1 tablespoon Sliced almonds
- Toast the almonds in a pan without fat. Bring the milk with the roasted almonds to the boil. Take off the stove.
- Finely dice the onion. Peel the sweet potato and cut into cubes.
- Melt the butter in a saucepan. Steam the onion until translucent. Add the sweet potato and sweat briefly. Deglaze with vegetable stock. Bring to the boil once and cook on a low flame for 12 to 15 minutes.
- Drain the sweet potatoes. Catch the broth. Puree the sweet potatoes with a little broth. Add the milk with the almonds. Mix everything through. Pour in as much broth, depending on how thin you want the soup. Season with pepper.
- Toast the sliced almonds in a pan without fat.
- Pour the soup into a deep plate. Sprinkle with the almonds.
