Ingredients for 4 servings:
- 400 g sweet potatoes, chopped
- 20 g ginger, chopped
- 1 onion(s), chopped
- vegetable oil
- 1 tsp cayenne pepper
- 1 tsp, heaped cumin
- 1 tsp, heaped turmeric
- 500 ml vegetable stock
- 6 tbsp orange juice
- 4 tbsp milk
- Salt
- pepper
- Coriander leaves
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Heat the oil in a pan (preferably a wok), add the ginger and onion, and sauté for 1 minute. Add the cayenne pepper, cumin, and turmeric and sauté briefly. Deglaze with 3 tablespoons of orange juice and simmer briefly. Stir in the sweet potato pieces and add the vegetable stock. Cook for about 20 minutes. Finally, add the remaining orange juice and the milk. Season to taste with salt and pepper. Blend briefly again.
