Delicious apricot gratin

Ingredients for 4 servings:

  • 100 g butter
  • 80 g powdered sugar
  • 1 pinch of vanilla sugar
  • 1 dashes Amaretto
  • 4 eggs
  • 250 g quark
  • 1 tsp flour
  • 8 apricots, fresh
  • 4 scoops of vanilla ice cream

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 32 minutes

Separate the eggs. Cream the butter with the powdered sugar until fluffy. Stir in the vanilla sugar, Amaretto, and egg yolks thoroughly. Beat 2 egg whites until stiff peaks form. Wrap the quark in a cloth and press down firmly. Mix well with the mixture, add the flour, and carefully fold in the egg whites. Grease four ovenproof dishes well with butter and fill equally with the mixture. Place the pitted and halved apricots on top of the quark cream and bake in the oven at 180°C for about 12 minutes. Remove from the oven, sprinkle with powdered sugar, and place a scoop of vanilla ice cream in the center. Serve the gratin quickly before the ice cream melts.
