Sweet potato toast with ham and egg

Ingredients for 1 servings:

  • 1 sweet potato(s)
  • 4 slices of ham
  • 2 eggs
  • e.g. lamb’s lettuce
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash and trim the potato thoroughly. Then cut into 0.5–2 cm thick slices. Toast the sweet potato slices two to three times (depending on your toaster) on the highest setting until they are golden brown or reach your desired consistency. In the meantime, prepare your topping ingredients – simply fry one or two fried eggs and wash the lamb’s lettuce. When the toast has the desired consistency, top with ham and the fried egg. If desired, you can sprinkle the sweet potato toast with lamb’s lettuce, salt, and pepper, and your sweet potato toast is ready!
