Sweet Potato with Sour Cream and Rocket Salad

The perfect sweet potato with sour cream and rocket salad recipe with a picture and simple step-by-step instructions.

  • 4 Sweet potatoes
  • 2 Mug of sour cream
  • Olive oil paprika powder
  • 1 Spring onion
  • 1 Bunch of rocket
  • 8 Cherry tomatoes
  • 1 Small onion
  • Olive oil sanitini, chilli fig balamic vinegar on tap
  1. Cook sweet potatoes with their skins in the microwave. Add the spring onion and 2 tablespoons of olive oil to the sour cream. Season with paprika powder and salt and garnish with fresh basil leaves.
  2. Season the rocket, cherry tomatoes and the onion with salt and pepper. Drizzle with a teaspoon of balsamic vinegar and 2 teaspoons of olive oil.
