Sweet Potato with Sour Cream and Rocket Salad

Ingredients
 

  • 4 Sweet potatoes
  • 2 Mug of sour cream
  • Olive oil paprika powder
  • 1 Spring onion
  • 1 Bunch of rocket
  • 8 Cherry tomatoes
  • 1 Small onion
  • Olive oil sanitini, chilli fig balamic vinegar on tap

Instructions
 

  • Cook sweet potatoes with their skins in the microwave. Add the spring onion and 2 tablespoons of olive oil to the sour cream. Season with paprika powder and salt and garnish with fresh basil leaves.
  • Season the rocket, cherry tomatoes and the onion with salt and pepper. Drizzle with a teaspoon of balsamic vinegar and 2 teaspoons of olive oil.
