Rüdi`s Style Potato Salad with Sour Cream

The perfect rüdi`s style potato salad with sour cream recipe with a picture and simple step-by-step instructions.

  • 1,5 kg Waxy potatoes
  • 1 Cup Beef broth instant)
  • 5 Gherkins
  • 1 Onions
  • 2 Hard-Boiled eggs
  • 1 a cup Sour cream
  • 1 a cup Yogurt
  • Salt pepper
  1. Boil waxy potatoes, peel, quarter and cut into cubes. Dissolve 1 large cup of stock (beef boulion or chicken boulion) in boiling water and pour over the potatoes. Stir gently and let cool in the refrigerator. Cut the pickles, onions and hard-boiled eggs into small cubes. After about 10 minutes, drain the unabsorbed stock from the potatoes. Add the diced cucumber, onions and eggs to the potatoes and stir gently. Add all herbs, e.g. chives and parsley (amount and type as desired). Stir in 1 cup of sour cream, cucumber water and 1 cup of yogurt. Season to taste with salt and pepper. Goes well with grilling and also with fried fish.
