Sweet potatoes with chicken and coconut

Ingredients for 4 servings:

  • 1 ½ kg sweet potatoes
  • ½ kg chicken breast fillet(s)
  • 2 cans of coconut milk
  • 1 large onion(s)
  • 3 clove(s) garlic, squeezed
  • salt and pepper
  • 4 tbsp curry paste, green, red or yellow

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Peel and dice the sweet potato. Cut the chicken breast into thin strips. Dice the onion into small cubes. Sauté everything in a large pan over medium heat for 10 minutes, stirring regularly. Then add the remaining ingredients and cook for another 10 minutes. When the sweet potatoes are tender, the dish is ready.
