Ingredients for 1 servings:

  • 125 g butter
  • 125 g sugar
  • 1 egg(s)
  • 1 pinch of cinnamon
  • 1 pinch of nutmeg
  • 1 tsp. clove powder
  • 1 lemon(s), grated peel
  • 125 g flour
  • 125 g hazelnuts, ground
  • 125 g breadcrumbs or biscuit crumbs
  • 150 g powdered sugar
  • 3 tbsp lemon juice
  • 80 g jam

Instructions

Working time approx. 40 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 40 minutes

For the dough, cream the butter and sugar until fluffy. Stir in the egg and spices. Add the flour, hazelnuts, and breadcrumbs or biscuit crumbs and knead everything into a smooth dough. Cover and let rest in the refrigerator for one hour. Roll out the dough on a floured surface into a sheet about 5 mm thick and cut into small rectangles. Use your thumb to make small indentations in the center and add a little jam. Place on a baking sheet and bake in the preheated oven on the middle rack for 15-17 minutes (electric oven: 190°C, gas mark 2-3). Allow the cookies to cool completely on a wire rack. For the icing, mix the sifted icing sugar with the lemon juice and brush the cookies with it.
