Ingredients for 1 servings:
- 250 g flour
- 125 ml milk, lukewarm
- 20 g yeast, fresh
- 1 egg yolk
- 80 g butter, liquid
- ½ tsp salt
- 5 tbsp sugar
- 100 g crème fraîche
- 100 g cream cheese, natural
- 2 tbsp liqueur (lemon liqueur)
- 500 g strawberries, fresh
- 50 g pineapple, cut into sticks
- 1 pinch of vanilla extract
- 1 tbsp lemon juice
Instructions
Working time approx. 45 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour
Cake
Dissolve the yeast in a little warm milk and knead it with the flour, remaining milk, egg yolk, melted butter, salt, and 3 tablespoons of sugar to form a smooth dough. Let it rise, knead again, and roll it out into a pizza shape. Let it rise again and bake at 210°C (convection oven) for 12-15 minutes (depending on your oven). Let the base cool and place it on a cake plate. Mix the crème fraîche with the cream cheese, 1 tablespoon of sugar, and the lemon liqueur (I use limoncello) and spread it on the dough. Puree 100g of strawberries with the vanilla extract (I use powder), 2 tablespoons of sugar, and 1 tablespoon of lemon juice and spread it on the crème fraîche mixture. Slice 400g of fresh strawberries and top the “pizza” with them. Finally, arrange the pineapple sticks on top as the “cheese.” The pizza is ready to eat. Tip: If you want to make them ahead of time, brush them with glaze. But be sure to eat them the same day, as the yeast dough hardens overnight.
