Ingredients for 2 servings:
- 100 g rice (risotto rice)
- 1 onion(s), red, chopped
- 1 garlic clove(s), chopped
- 2 tsp olive oil
- 30 ml red wine vinegar, dry
- 100 ml water
- 200 ml tomato(s), pureed
- 4 tomatoes, fresh
- 100 g young leaf spinach, chopped
- 60 g feta cheese
- 30 g cheese (Pecorino), grated
- Sugar
- Balsamic vinegar (Crema di Balsamic vinegar)

Sauté the rice, chopped onion, and chopped garlic in oil. Deglaze with passata, water, and red wine. Simmer, stirring constantly. Add the chopped tomatoes and spinach. Season with sugar and balsamic vinegar. Finally, add the finely chopped feta cheese and grated pecorino.
