Sweets / Desserts: Orange and Apple Gratin with Coconut

The perfect sweets / desserts: orange and apple gratin with coconut recipe with a picture and simple step-by-step instructions.

Gratin:

  • 1 Orange
  • 1 Apple
  • 2 tsp Freshly squeezed lime juice
  • 3 Egg yolk
  • 1,5 tbsp Coconut syrup
  • 70 g Finely sifted powdered sugar
  • 0,5 Tonka bean, finely grated
  • 60 g Desiccated coconut
  • 100 g Cream

To sprinkle:

  • 4 tbsp Desiccated coconut

Aside from that:

  • Some fat for the molds
  • 4 tsp Powdered sugar, finely sifted
  1. Preheat the oven to 180 degrees (top and bottom heat). Peel the orange and apple. Fillet the orange, cut the fillets into small pieces. Cut out the core of the apple, finely dice the pulp. Drizzle with lime juice and mix the orange fillets.
  2. Mix the egg yolk, coconut syrup, powdered sugar, tonka bean zest and desiccated coconut with the whisk. Whip the cream until stiff and fold in. Thinly grease four small gratin or tartlet molds.
  3. Distribute the fruit mixture evenly in the molds, then pour the coconut mixture over it and smooth it out a little. Sprinkle with the desiccated coconut and bake in the oven for about 15-20 minutes. Let cool down a bit, then dust with powdered sugar. Serve warm or cold and enjoy.
