Like from iglo, with ham and cheese or mushrooms
First, make a thick batter from flour, milk, and an egg. Then, in a nonstick pan, cook pancakes from the batter with little or no fat, but only on one side, until the batter is no longer runny on top. Set the pancakes aside after cooking on one side. Cut the mozzarella into 1 cm thick slices. On the uncooked side of each pancake, place a slice of mozzarella, half a tablespoon of processed cheese, and a handful of diced ham. If you like, you can replace the ham with mushrooms or sun-dried tomatoes, for example. You can also sprinkle herbs on top; oregano, for example, works well. Now fold the filled pancakes in half and, like a ravioli, press the edges together to seal the filling. Coat the resulting half-moons in the other egg and breadcrumbs. Heat a large amount of margarine in a pan so that the fat reaches about 0.5 cm in the pan. Fry the breaded patties in the pan until golden brown on both sides. After frying, let it rest on a paper towel for a few seconds to absorb any excess fat.
