Ingredients for 2 servings:
- 200 g meat sausage or similar cooked sausage
- 100 g Appenzeller
- 1 m.-large onion(s), red
- 2 small gherkins
- 2 radishes
- some chives
- 1 pinch(s) sweet paprika powder
- 3 tbsp herb vinegar
- 3 tbsp sunflower oil
- 1 pinch of Dijon mustard
- 1 pinch(s) of sugar
- Salt and pepper, black, from the mill
Instructions
Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes
Skin the pork sausage, slice it, and then cut it into strips. Remove the rind from the Appenzeller cheese and dice it. Peel the onion and slice it into thin rings. Slice the gherkins lengthwise into sticks. Wash and chop the radishes. Place everything in a bowl. Mix the vinaigrette in a small container and season to taste. Pour the marinade over the sausage salad and mix everything thoroughly. Cover the salad and let it sit in the refrigerator for one hour. Wash the chives, pat them dry, and cut them into rolls. Toss the salad again and season to taste. Finally, sprinkle the paprika and chives over the sausage salad. Serve with pretzels or bread.
