Ingredients for 4 servings:
- 1 kg potatoes
- 1 bunch of mint
- 1 bunch of parsley
- ½ lemon(s), the juice
- 1 tsp sugar
- Salt
- Pepper, freshly ground
- 100 ml olive oil
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Wash the potatoes and boil for 20-25 minutes, peel, and slice. Wash the mint and parsley, shake dry, and finely chop. Whisk the lemon juice, sugar, salt, and pepper with the olive oil and mix with the herbs into the potatoes.
