Ingredients for 4 servings:

  • 1 cup bulgur or couscous
  • 1 bunch parsley, fresh
  • 3 sprigs mint, fresh
  • ½ cucumber(s)
  • 4 spring onions
  • 1 bell pepper(s), red
  • 2 beefsteak tomatoes
  • 1 lemon(s), the juice
  • olive oil
  • Pepper, freshly ground
  • chili flakes
  • Salt
  • Sugar

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Chop the parsley, mint, cucumber, bell pepper, tomatoes, and onions as finely as possible. Meanwhile, pour hot water over the bulgur and let it swell for a few minutes. Stir all ingredients together, season with pepper, and drizzle with lemon juice and oil just before serving. Stir again and season with the spices and lemon juice. It tastes best when left to steep, so it’s best prepared in advance.
