Ingredients for 12 servings:
- 3 eggs
- 200 g flour
- 100 ml milk
- 100 ml oil
- 1 tbsp baking powder
- salt and pepper
- ½ tsp herbs de Provence
- nutmeg
- 100 g olives, sliced
- 100 g tomatoes, dried, cut into strips
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes
Combine egg, oil, and milk with herbs, nutmeg, salt, and pepper. Add flour and baking powder and stir vigorously. Fold in olives and tomatoes. Divide batter into muffin cups. Bake for 20 minutes at 180 degrees Celsius (350 degrees Fahrenheit).
