fruity tomato-pepper dip with chili
Finely chop the onions and fry in a little oil in a pan until translucent. Dice the tomatoes, bell peppers, and chilies as finely as possible and add them to the pan with the translucent onions. Let everything simmer for a while. Season to taste with about 2 tablespoons of herb vinegar, 2 tablespoons of sugar, salt, and pepper. Then blend everything thoroughly with a hand blender. Finally, let it cool. Tip: Add the finely chopped chilies a little at a time to adjust the spiciness. Serve with a variety of tacos—chili tacos increase the heat, while salted ones reduce the dip slightly.
