Tagliatelle with arugula and cheese sauce

Ingredients for 2 servings:

  • 70 g butter
  • 4 tbsp flour
  • 300 ml milk
  • 150 g blue cheese
  • 100 g arugula
  • Salt and pepper, colorful
  • 500g tagliatelle
  • salt water

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Fill a large pot of water with a pinch of salt and bring to a boil. Meanwhile, melt the butter in a small pot and stir in the flour until creamy. Gradually add the milk until you have a relatively thin sauce. Dilute with water if necessary. Add salt and pepper to taste. Crumble in the cheese and let it melt. Chop the arugula (I use the herb attachment on my food processor) and set aside. Add the pasta to the boiling water and cook according to the package instructions. Just before the end of the pasta cooking time, add the arugula to the sauce. Drain the pasta and serve with the sauce.
