  • e.g. vinegar, (wine vinegar)

Instructions

based on a recipe by Mary Hahn (1920)

Half-fill a bottle with a tightly fitted cork with fresh tarragon leaves and then top up with wine vinegar. Then, with the cork tightly closed, let the bottle stand in a sunny window for a few weeks. Then, strain the vinegar through a cheesecloth and pour it into another bottle. According to the original recipe, it was intended as a salad dressing.
