Ingredients for 1 servings:

  • 1 large lemon(s), untreated
  • 3 sprigs lemon thyme
  • ½ liter vinegar (white wine vinegar)

Instructions

Working time approx. 20 minutes; Rest period approx. 21 days; Total time approx. 21 days 20 minutes

Wash the lemon in hot water and peel it very thinly. Pick the herbs in the morning if possible, rather than washing them. Place both in a glass jar and pour the vinegar over them. Seal the jar and let the vinegar steep for about three weeks. Then remove the lemon peel and herbs. If you like, you can leave the herbs in as long as they’re still covered, then filter them.
