Ingredients for 4 servings:
- 1 egg(s), the yolk
- 150 ml olive oil
- 2 gherkins, diced
- 1 tsp capers, finely chopped
- 1 clove(s) garlic, squeezed
- 1 shallot(s), very small or spring onion
- 1 tbsp parsley, finely chopped
- 1 tsp mustard
- 1 tbsp lemon juice, freshly squeezed
- salt and pepper
- e.g. cayenne pepper or Tabasco
Instructions

A must with baked mushrooms, but also suitable for roast beef
Place the egg yolks in a bowl and slowly add the olive oil, stirring constantly, until a smooth mixture (like mayonnaise) forms. Add the gherkins, parsley, garlic, capers, shallot, mustard, and lemon juice. Season to taste with salt, pepper, and cayenne pepper, if desired.
