made quickly
Preheat the oven to 225°C (top/bottom heat). Wash and peel the asparagus, and trim off the tough ends. Cut the asparagus stalks diagonally into approximately 0.5 cm thin slices. Trim the spring onions and also slice them thinly. Roll out the tarte flambée dough on a baking sheet lined with baking paper. Mix the hollandaise sauce and sour cream well and spread it on the dough, leaving a small border free all around. Arrange the cooked ham on top, scatter the asparagus and spring onions on top, and season with salt and pepper to taste. Optionally, sprinkle the tarte flambée with a handful of grated cheese and bake in the preheated oven for approximately 20 minutes, initially on the lowest rack, then move to the middle rack about halfway through the baking time. The temperature and baking time are only guidelines, as every oven bakes differently.
